Danzai noodles
Taiwan · East Asia

Danzai noodles are a Tainan noodle dish topped with braised pork, commonly served with a shrimp-flavoured broth. The tourism administration’s account of Small Park Danzai Noodles describes broth made from shrimp heads and pork cooked with scallions before slow simmering. The blanched noodles receive the pork and broth, followed by black vinegar, minced garlic, coriander and bean sprouts. Together these ingredients combine a savoury meat topping with seafood broth and a little acidity.[1]
The name refers to the carrying pole used by sellers who originally carried their noodle stalls. At Small Park, the noodle seller’s low stool also remains part of the serving tradition described by MICHELIN’s inspectors. Their account distinguishes noodles tossed in pork sauce from those served in soup; the latter use chewy oil noodles topped with shrimp and braised minced pork. These are preparations documented at the named Tainan shop, rather than a single recipe imposed on every seller.[1][2]
