Folded steamed buns filled with pork, greens, peanuts, and herbs in a bamboo steamer.
gua bao

Gua bao is a Taiwanese steamed bun filled with braised pork belly, pickles, peanuts and coriander. Its soft, semicircular bun folds around the filling, leaving the meat and garnishes visible at the open edge. Pickled mustard greens are a usual accompaniment to the pork, while crushed peanuts and coriander add contrasting textures. The buns can be served as a small dish or as the main part of a meal.[1]

Cook Maggie Zhu’s version browns the pork before braising it with ginger, garlic, scallions, soy sauce, Shaoxing wine and spices. The cooking liquid is strained and reduced, then used to coat the tender meat before assembly. Her adaptation replaces the usual pickled mustard greens with quick-pickled shallots, showing how the acidic garnish can vary while the bun and braised-pork filling remain recognisable.[1]
