Three-cup chicken

Three-cup chicken is a seasoned chicken dish whose name refers to rice wine, soy sauce and sesame oil. The ingredients need not be measured as three literal cups in a household recipe. Sarah Leung’s family preparation uses chicken wings browned with ginger, garlic and dried chilli, then simmered with Shaoxing wine, soy sauces, sugar and a little water. The sauce is reduced until it coats the chicken.[1]

Leung records differences within her own family: her mother uses plenty of scallions, while her grandmother adds Thai basil. Her published recipe allows either garnish or both. Dark soy sauce gives her version its deep colour, but she describes that intensity as a personal preference.[1]
