Boat Noodles
Thailand · Southeast Asia

Boat noodles, or guay tiew ruea, are Thai noodles served in a dark, aromatic meat broth. Pork or beef bones provide the stock, with seasonings such as cinnamon, star anise, coriander seed, galangal and soy sauces. Versions called nam tok include blood to enrich and thicken the broth; versions without blood are also available.[1]
Pailin Chongchitnant’s pork preparation combines rice noodles with sliced pork, meatballs, bean sprouts and water spinach. Fried garlic, herbs, chilli vinegar and crispy pork rind accompany the bowl. The name recalls vendors selling noodles from boats along Bangkok’s canals, and the small serving bowls remain characteristic of the dish.[1]
