Gaeng Hang Lay

Gaeng hang lay is a northern Thai pork curry with a rich sauce and aromatic dried spices. Pork belly and ribs are slowly braised with curry paste. Ginger, whole garlic cloves and tamarind give the dish distinctive flavours, while sugar and fish sauce season the sauce.[1]

Pailin Chongchitnant’s curry paste combines dried chillies, garlic, shallots, lemongrass, galangal, turmeric and shrimp paste with a ground spice mixture that includes cinnamon, cumin, coriander and star anise. The pork is browned, the paste is fried in its rendered fat, and water and seasonings are added for braising. Garlic and ginger finish cooking in the sauce before the curry is served with rice.[1]
