Khao Man Gai
Thailand · Southeast Asia

Khao man gai is the Thai form of Hainanese chicken rice, with poached chicken served over rice cooked in chicken fat and broth. Garlic is fried in rendered chicken fat before the rice is added. The rice then cooks in the broth used to poach the chicken. Sliced chicken is served with cucumber and a separate bowl of broth.[1]
The Thai dipping sauce, nam jim taojiew, contains fermented soybean paste, ginger, chillies, soy sauces, sugar and vinegar. Pailin Chongchitnant’s grandmother also makes a separate sour, spicy sauce with garlic, chilli, coriander, soy sauce and lime. This second sauce is her grandmother’s own creation.[1]
