Mango sticky rice
Thailand · Southeast Asia

Mango sticky rice is a Thai dessert of sweet coconut glutinous rice served with ripe mango. In Pailin Chongchitnant’s preparation, soaked rice is drained and steamed, then mixed while hot with a heated syrup of coconut milk, sugar and salt. Optional pandan flavours the syrup. The rice rests covered as it absorbs the liquid.[1]
A separate topping thickens coconut milk and salt with a rice-flour slurry. Shelled split mung beans are briefly cooked, drained and dried, then toasted in a lightly greased pan until crisp. The rice is plated beside fresh mango and topped with the salted sauce and crunchy beans.[1]
