Nam Prik Ong

Nam prik ong is a northern Thai dip made with ground pork, tomatoes and chillies. The pork and tomatoes cook with a paste of dried red chillies, garlic and shallots. The dip is served with fresh vegetables, pork rinds and sticky or steamed rice. Fermented soybean cakes, known as tua nao, can contribute to its seasoning.[1]

Mary Thatcher’s version uses shrimp paste in place of the fermented soybean cake. The chilli paste is fried first, then the pork and chopped tomatoes are added and cooked into a sauce. Tamarind concentrate and salt season her dip, which is finished with spring onions and coriander.[1]
