Pad Kra Pao

Pad kra pao is a Thai stir-fry flavoured with holy basil. Pailin Chongchitnant’s chicken version starts with a pounded garlic-and-chilli paste fried in oil. Coarsely minced chicken is added, followed by a sauce of oyster sauce, soy sauces, fish sauce, sugar and water. Onion and long beans cook with the chicken.[1]

Holy basil is stirred in after the pan is taken off the heat. The stir-fry is served over jasmine rice with a fried egg whose edges are browned and bubbly. Optional prik nam pla seasons the egg: fish sauce mixed with lime juice, chopped chilli and garlic.[1]
