Pad see ew is a Thai stir-fried dish of wide rice noodles, egg, Chinese broccoli and soy-based seasoning. The fresh noodles, called sen yai, are soft and chewy, with browned edges from contact with the hot wok. Pork, chicken, beef, shrimp or tofu can accompany them. White pepper and prik nam som, a chilli-vinegar condiment, are served with the noodles.[1]

Pailin Chongchitnant’s version cooks the meat separately, then stir-fries garlic, egg and Chinese broccoli before adding the noodles. Her sauce combines oyster sauce, regular and black soy sauces, fish sauce and Golden Mountain seasoning. Sugar is added with the noodles, and the cooked meat returns to the wok at the end.[1]
