som tam Thai

Som tam thai is a Thai green-papaya salad with roasted peanuts and dried shrimp. In Pailin Chongchitnant’s preparation, garlic and chilli are pounded in a mortar, then palm sugar is worked into the paste. Long beans are lightly crushed before the peanuts, dried shrimp, fish sauce, tamarind and lime juice are added.[1]

Shredded papaya and tomatoes are added and repeatedly pounded and turned with a spoon so the dressing coats them and the papaya softens slightly. More peanuts can top the salad. Chongchitnant suggests sticky rice and grilled chicken as accompaniments; she also describes mixing and massaging the salad in a bowl when a mortar is unavailable.[1]
