tom yum goong
Thailand · Southeast Asia

Tom yum goong is a Thai hot-and-sour shrimp soup flavoured with lemongrass, galangal and makrut lime leaves. Pailin Chongchitnant makes a stock from shrimp shells and heads, with chicken stock as an alternative. The broth is simmered with the aromatic herbs, chilli and mushrooms, then seasoned with fish sauce and nam prik pao, Thai chilli paste.[1]
The shrimp are cooked in the broth, then lime juice adjusts its sourness and sugar may balance the flavour. Chopped coriander finishes the soup, which is served with jasmine rice. A creamy variation, tom yum goong nam kon, adds evaporated milk to the broth.[1]
