Ikan sabuko

Ikan saboko is Timorese fish seasoned with chilli and tamarind, wrapped in leaves and grilled. In Caritas Australia’s recipe, shallots, garlic, red chilli, tomato and tamarind are blended with bilimbi or lime into a paste that coats the fish. The recipe allows whole red snapper or tilapia, or white-fish fillets.[1][2]
Lemon basil is laid over the fish before the banana leaf is folded into a parcel. The packets are grilled over charcoal on both sides.[2]
