Kuymak

Kuymak combines cornmeal, butter and cheese in a hot pan. The Trabzon regional recipe begins by melting butter and cooking the cornmeal in it until it colours. Hot water is then added to cook the mixture further. Once it begins to thicken, telli peynir, a stringy cheese, is stirred in.[1]

The mixture is gently worked with a wooden spoon while the cheese cooks into the cornmeal. The regional recipe adjusts the added salt according to the saltiness of the cheese and serves the finished kuymak hot.[1]
