dograma
Turkmenistan · Central Asia

Dograma is a Turkmen dish of crumbled bread, boiled lamb and sliced onion, usually served with hot meat broth. A special unleavened bread called petir is baked and cooled while the lamb cooks. The bread is broken into small pieces by hand and mixed with finely sliced onion. The cooked lamb is removed from the bones, chopped and combined with the bread and onion.[1]
Dograma is prepared for religious holidays and other ritual occasions. Its preparation can involve the family and invited neighbours working together. The bread takes up the flavour of the meat and onion; the mixture can be eaten dry, although adding hot broth is the customary way to serve it.[1]
