posho and beans
Uganda · Sub-Saharan Africa

Posho and beans pairs a firm maize-flour preparation with a bean sauce in Uganda. In a first-hand cooking account, Sara describes stirring a mixture of maize flour and water into boiling water until thick. Further steaming firms the mixture; banana leaves can hold it, or a smaller pot can sit inside a covered larger pot containing water.[1]
Her bean accompaniment contains beans, carrot and onion. The sauce is served over the cooked posho. She also records peanut sauce as another accompaniment to the maize preparation.[1]
