Chicken tikka masala is a curry associated with British Indian cooking, combining cooked chicken pieces with a spiced sauce. Alfred Prasad’s recipe marinates chicken thigh in yogurt, ginger-garlic paste, chilli, paprika, turmeric and garam masala. A mixture of gram flour cooked in oil also goes into his marinade.[1]

Prasad cooks the chicken on a rack in the oven and finishes it under the grill. He prepares a butter-enriched tomato makhani sauce and a separate onion-and-tomato masala, then combines both with the cooked chicken. Cream is drizzled over the finished dish, with coriander cress as an optional garnish.[1]
