Buffalo wings
United States · North America

Buffalo wings are fried chicken wing pieces tossed in a buttery hot sauce. Anchor Bar’s account describes cutting wings into their flat and drum sections, frying them until crisp outside and tender inside, then coating them with sauce. Celery and blue-cheese dressing accompany the wings.[1]
The restaurant associates this preparation with Teressa Bellissimo and its Buffalo premises in 1964. Its published menu offers mild, medium and hot Buffalo sauces as well as other flavours and dry rubs. Celery remains an accompaniment, with blue-cheese or ranch dressing among the choices.[1]
