New Orleans beignets

New Orleans beignets are square pieces of dough that are fried and covered with powdered sugar. At Café du Monde they are served in portions of three. The café describes earlier Louisiana fritters as sometimes containing fruit, whereas its present-day beignets are squares of dough with sugar over the surface.[1]

Beignets are part of the café tradition of New Orleans’ French Market. Café du Monde dates its original coffee stand to 1862 and serves them alongside dark-roasted coffee blended with chicory. The coffee can be taken black or as café au lait, mixed with hot milk.[2]
