Manti

Uzbek manti are large filled dumplings usually cooked in a tiered steamer. Uzbekistan Travel describes a firm dough rolled thin, cut into rounds or squares and filled with minced or finely chopped meat. A piece of fat can be added to keep the filling juicy. The enclosed dumplings cook above the water rather than in it.[1]

They are commonly served with suzma, a fermented dairy accompaniment known as chakka in Samarkand. The same account lists pumpkin-filled oshkovok manti, fried kovurma manti, broth-cooked suv manti and open ochik manti among the variations.[1]
