Bánh cuốn

Bánh cuốn are soft, thin rice-flour rolls filled with savoury ingredients. Becca Du’s grandmother’s recipe combines rice flour and tapioca starch with water, oil and salt for the wrapper batter. The filling is minced pork seasoned with fish sauce, sugar and pepper, cooked with onion and wood-ear mushrooms.[1]

In this family method, a thin layer of batter cooks in a covered nonstick pan, then is turned onto a flat surface. The cooked filling is placed on the sheet and rolled inside it. Du spoons green-onion oil over the rolls and adds sliced chả lụa pork sausage, mint, fried shallots and cucumber, with nước chấm over the plate.[1]
