Cơm tấm sườn
Vietnam · Southeast Asia

Cơm tấm sườn combines broken rice grains with grilled pork chops. The grains are fragments produced during rice milling, and the rice plate is especially associated with southern Vietnam and Ho Chi Minh City. Vicky Pham’s pork-chop recipe uses a marinade of lemongrass, garlic, fish sauce, oyster sauce, sugar, honey, black pepper and the white parts of green onions. The grilled meat is brushed with green-onion oil.[1]
The plate can include pickled carrot and daikon, cucumber, tomato and a fried egg. Other accompaniments include chả trứng, a steamed pork-and-egg loaf, and bì, thin strips of cooked pork and pork skin mixed with roasted rice powder and garlic. Nước chấm is served alongside, sometimes with a light pork-bone soup.[1]
