Harira is a Moroccan soup of tomato, chickpeas and lentils with fresh herbs and spices. Meat may flavour the broth, but vegetarian versions are also made. Rice or broken vermicelli adds substance, and the soup is thickened near the end. It is eaten throughout the year and is especially associated with breaking the Ramadan fast.[1]

Christine Benlafquih’s family version includes onion, celery, parsley and coriander, with ginger and pepper among the seasonings. A flour-and-water mixture, called tedouira, thickens the soup. Its consistency varies between lighter and thicker preparations. Dates, chebakia pastries or bread may accompany a bowl, while lemon can be offered for additional acidity.[1]
