Tandoori chicken is an Indian preparation of chicken marinated in yogurt and spices, then roasted in a tandoor, a cylindrical clay oven. Bone-in thighs, legs or quarters are commonly used. Ginger, garlic, garam masala, cumin, coriander and chilli are among the marinade seasonings.[1]

Wood or charcoal heats the traditional tandoor and contributes a smoky character. Home preparations can use an oven, griddle, air fryer or direct fire. The chicken is served with coriander or mint chutney, onion and lemon wedges. Dried fenugreek leaves may also be included in the marinade.[1]
