Chivito

Chivito is a substantial sandwich built around beef steak. Marcelo Bornio’s preparation for the Uruguayan programme Vamo Arriba combines lomo steak with cooked ham, mozzarella, panceta, tomato, lettuce and mayonnaise in a bread roll. A fried egg completes the sandwich, which he serves with fries.[1]

Bornio folds the cheese inside the ham and wraps this parcel in panceta before cooking it alongside the steak. The parcel is placed over the beef during assembly. Restaurant preparations also vary: Pellicer’s version uses rocket, Dijon mayonnaise and house-made bread, with rustic potatoes on the side.[1][2]
